Cinnamon Apple "Oatmeal" - Recipe for Chilly Mornings!





One of the foods I miss quite often since beginning the Paleo diet is oatmeal. In college, I would serve myself an enormous portion and fill it with sugar-free maple syrup, nuts, cinnamon, and raisins. The problem with this bowl of oatmeal is that it had too many carbs (mostly from the oats themselves) that caused me to crash just a couple of hours later. There are about 100 grams of carbs in the aforementioned bowl of oatmeal. No matter who you are, 100 grams of carbs from a simple bowl of oatmeal is a lot. What is your body supposed to do with all of it?

I really do love oatmeal, though, and I've missed it. It's warm, delicious, and tastes like Fall :) I've had my eye on a few paleo-ified oatmeal recipes recently. Some suggest to use baked butternut or pumpkin squash. I'm sure they make delicious breakfast bowls, but I think that might be a little too gooey to convince my brain it's oatmeal. Then I read one strategy that involved cauliflower. (You may not be pro-paleo, but you have to admit we can do some awesome things with cauliflower.)

Here's a recipe I created for Paleo Cinnamon Apple Oatmeal, using cauliflower as a base:




With this recipe, the "right" flavor is subjective. So taste at the end and adjust cinnamon, nutmeg, or any other spices you'd like as needed!



It even looks like oatmeal :) I actually had a few bites, literally bounced with happiness, and somehow managed to put the rest away for tomorrow's breakfast. I haven't had oatmeal since November, and I was definitely a super happy eater this afternoon :)

Question: What's your favorite breakfast on cold mornings? It was actually 83 degrees before the sun came up this morning, so it's not actually cold yet. But I can pretend :)
