Breakfast Meatball Scramble

     I generally don't eat the same meal for dinner two nights in a row. If I make a new recipe on Monday, we'll probably have leftovers on Wednesday. I'll make a separate meal on Tuesday, and we'll probably eat those  leftovers on Thursday. My parents did it that way, and I kind of like it.
    Well, that wasn't the case for Monday night's Italian Spaghetti and Meatballs recipe! I loved the Italian seasoned chicken sausage and beef meatballs so much that I wanted it for dinner on Tuesday and again for breakfast this morning!
     I went for a run this morning before eating breakfast, and I was famished  when I got back. I opened the refrigerator, and the leftover meatballs were calling to me. I love to use up leftovers in different ways, and they usually wind up in a scramble or a salad.

BREAKFAST

This recipe may also work well as an omelet, but I lack the culinary skills necessary to keep an omelet from falling to pieces!

   This recipe took less than 10 minutes to make, and it was of course delicious.

Ingredients:
3-4 meatballs, chopped into bite-sized pieces
3 cups spinach
2 eggs
Coconut Oil (or your cooking fat of choice)

Instructions:
Heat coconut oil in pan. Add spinach and saute until it has completely wilted. Add in chopped meatballs. Cook meat balls and spinach until warm, 1-2 minutes. Add in eggs and stir all ingredients together. Your meal is ready when eggs are cooked through! Serve with a side of berries and enjoy!

This breakfast is packed with protein and veggies, and it takes very little time to make. Leftovers to the rescue :)

Yesterday I made a scramble with leftover rosemary roasted new potatoes. Have I said the word 'leftovers' enough yet in this post. Leftovers. Love them :)
