S'Mores and Waffles

    Two treats: one very indulgent and the other seemingly indulgent, but actually very diet/paleo/calorie/*insert concern here* friendly.


    Our friends gave us a gift card for Sweet Paris in Houston, and they serve an assortment of delicious looking crepes. Of course, crepes are not paleo in any way, shape, or form. But sometimes a craving calls. I've been craving s'mores. Graham crackers, melted chocolate, and toasted marshmallows. Over a fire. Is anything better? Sure, I could could make a copy-cat version at home, but then I'd have extra s'mores ingredients lying around, and that doesn't do me any good. Fortunately, Sweet Paris had a crepe that would cure my s'mores craving.

    The inside was filled with actual toasted marshmallows. That's the genius part...toasted marshmallows. It tasted like they came right off a campfire. There were also crumbled graham crackers, chocolate shavings, and nutella.

I may have a s'mores problem. But it did hit the spot and fix the craving!

Now onto something much less indulgent: Paleo waffles! Many paleo-ified treats aren't so great for you because the sugar content is still high, but this recipe is primarily egg and coconut, so in paleo terms it's nearly guilt-free!

Here's the recipe, found on Copy Cake Cook.

Ingredients:
4 eggs
2 tablespoon coconut oil
1/4 cup coconut flour
1 teaspoon vanilla
1 tablespoon honey
1/2 teaspoon baking soda
1/8 teaspoon salt
1/4 teaspoon cinnamon
1/3 cup coconut milk or almond milk

Instructions:
In the bowl of a large mixer, beat egg whites until stiff peaks form. In a separate bowl, sift together coconut flour, baking soda, salt and cinnamon. In a medium bowl, mix together coconut oil, vanilla, almond milk, egg yolks and honey. Stir the coconut flour mix into the egg yolk mix. Plug in your waffle maker, start heating it up. Carefully fold in egg whites. to the mix. Pour batter, allow to cook through, and enjoy!

Breakfast for dinner! They look like waffles and taste like waffles, but their nutritional stats are pretty great. And they actually fill you up. Whenever I eat two small waffles, I feel gross, sluggish, and then I get hungry within an hour. There's enough protein, fat, and fiber in these waffles to keep you full. And they won't cause your blood sugar to spike.
Now if you'll excuse me, I'm off to plan a workout to start scorching some S'Mores Crepe calories!
