Bacon Chili Stuffed Sweet Potatoes! So Paleo and So Good!

I am super excited to share this delicious recipe with you all! I LOVE chili, and I hope you do too because it may make many appearances on my blog this season :)

Yesterday I went to work with Ryan so I could use the gym and get some work done in the sunny lobby while he finished up his Sunday rounds. Once I finished my work, I started browsing Pinterest for dinner inspiration. Hospitals are always freezing so I was drawn towards the warmer chili recipes. I found one on PaleOMG that sounded delicious. I used it as an inspiration to create these yummy Bacon Chili Stuffed Sweet Potatoes. You know your mouth is watering just reading the title!


Ryan couldn't get enough :) It was quite yummy!

First you need to bake the sweet potatoes. The sweet potatoes around here are enormous, so we only needed two for four servings. Preheat the oven to 400 degrees and bake for 40-50 minutes. 

While potatoes are baking, chop 6 slices of bacon and cook over medium heat. While bacon is cooking, start chopping veggies: 2 cloves garlic, 1 poblano pepper, 1 red bell pepper, and 1 red onion. I am too lazy to chop all of my veggies, and I like finely-diced veggies in a chili anyway, so I put everything in a food processor.



Once bacon is slightly crispy, add veggies! Allow to cook for about 5 minutes. 




Then add in 1 lb ground beef and a load of spices: 1T paprika, 1 1/2 T chili powder, 1T garlic powder, 1T cumin, 1/2 teaspoon chipotle chili pepper, 1/2 teaspoon onion powder, and 1/2 teaspoon sea salt. Cook until beef is no longer pink.

Next add in one can of fire roasted tomatoes and one can of plain tomato sauce. Allow to simmer for about 10 minutes.



Slice half of a sweet potato and stuff with chili! We served it along with garlic roasted broccoli and sliced broccoli stems!



This is a PERFECT chili for a football party :) You can eat it by itself or stretch it with sweet potatoes and veggies. Try it. It's great!

Here's a more compact recipe:
Ingredients:
2 large sweet potatoes
6 slices bacon, chopped
2 cloves garlic, diced
1 poblano pepper
1 red bell pepper
1 red onion
1 lb ground beef
1 tablespoon garlic powder
1 1/2 tablespoons chili powder
1 tablespoon cumin
1 tablespoon paprika
1/2 teaspoon chipotle chili pepper
1/2 teaspoon sea salt
1/2 teaspoon onion powder
1 14oz can fire roasted tomatoes
1 8oz can plain tomato suace

Instructions:
Preheat oven to 400 degrees. Bake sweet potatoes for 40-50 minutes or until soft. Heat a pan over medium heat. Add chopped bacon and cook until slightly crispy. While bacon is cooking, dice garlic, poblano, red pepper, and onion in food processor. Once bacon is slightly crispy, add diced veggies and garlic and cook for 5 minutes. Next, add ground beef and all seasonings. Cook until beef is no longer pink. Add tomatoes and tomato sauce to pan. Simmer for about 10 minutes. Slice sweet potato in half. Smother one half of potato with chili and enjoy!
