Paleo Food Friday #7

Happy Friday!

There were many non-Paleo items this week! Ryan and I went to San Antonio last weekend (you can read more about it here), and vacations are a time to let loose a little bit. There were drinks and chips and fried food and pancakes and it was awesome. But you can bet things went right back to normal when I got home!

So let's get started!



SATURDAY
There were no Paleo-friendly foods to speak of on Saturday. But I did have these delicious apple-cinnamon and chocolate chip pancakes :)



SUNDAY
Back to normal! Well...almost. We ate donuts on the riverwalk Sunday morning, but dinner Sunday night was a large salad loaded with veggies!



MONDAY
Monday night was, again, not an official Paleo meal. Many legumes are not generally consumed in the Paleo community, but when there are homemade red beans in the refrigerator, it's not a time to be picky! Ryan's mom made delicious red beans with sausage and ham. There was no rice, so I made cauliflower rice to keep in the Paleo spirit!

TUESDAY
We had SO many leftovers from last week's Crockpot Jambalaya Pasta that I ate it for breakfast AND lunch Tuesday!



WEDNESDAY
One head of cauliflower makes about 3 cups of cauliflower rice. Since Ryan and I couldn't possible eat that much with the red beans on Monday, I used the rest of eat to make Cinnamon Apple "Oatmeal." You may think cauliflower oatmeal sounds disgusting, but it's magic how the eggs and flax turn it into that oatmeal-like consistency. It's definitely one of my favorites!



THURSDAY
Thursday night I made Pina Colada Chicken! It's a simple, quick, and flavorful meal that pairs well with just about anything.



FRIDAY
Friday was just a fantastic day for food :) For breakfast, I had yet another cauliflower oatmeal bowl, this time with pumpkin. At lunch, I had Pina Colada Chicken leftovers. And for dinner, Ryan and I went to Corner Bakery Cafe where I got the Trip: two side salads and a cup of soup.


I had a sesame kale salad, tomato mozzarella salad, and tomato basil soup. And I gave the bread to Ryan :)

Non-Paleo Food Item: because we're all human
Well, this week had plenty of items to choose from after visiting San Antonio, but the best was probably the aforementioned Cinnamon Apple Pancakes!
