Pina Colada Chicken

I'm always looking for new recipes to make for dinner. In an effort to avoid cooking & eating boredom, I do my best to look for something different every week. People are creating new recipes every day, so there must be plenty to go around! I recently stumbled on this recipe for Pina Colada chicken on the blog An Edible Mosaic. I altered it slightly, and braced myself for the results.

This recipe may become a new favorite. I wasn't sure that the flavors would come together in the way I wanted them to, but I was incredibly happy with the outcome! If you enjoy the pineapple and coconut combo, you'll really enjoy this recipe :)



Ingredients:
1 lb chicken breasts, cut into bite sized pieces
salt & pepper, for seasoning chicken
2 tablespoons coconut oil, divided
1 medium onion, diced
1 red bell pepper, diced
1 yellow bell pepper, diced
1 teaspoon coconut flour
1/2 teaspoon salt
1/8 teaspoon pepper
1 20-oz can sliced pineapples, drained & chopped (or 2 cups fresh chopped pineapple)
2 cloves garlic, minced
2 teaspoons TJ's South African Smoke spice blend (or jerk seasoning)
2 1/2 tablespoons fresh lime juice
1/4 teaspoon lime zest
1 cup canned coconut milk
1/2 teaspoon vanilla extract

Instructions:
1. Heat coconut oil over medium heat in skillet. Season chicken with salt and pepper.
2. Brown chicken in skillet until cooked through. Set chicken aside.
3. Add more coconut oil to skillet, and then add peppers, onions, coconut flour, salt, and pepper. Allow veggies to cook for about 5 minutes, stirring occasionally.
4. Add pineapple and cook for about 3 more minutes.
5. Add garlic and TJ's South African Smoke seasoning to skillet and mix all ingredients well.
6. Add lime juice and zest and stir.
7. Stir in coconut milk, chicken, and any liquid released from the chicken. Let the mixture come to a boil and then lower heat and allow to simmer for about 5 minutes or until sauce thickens to desired consistency.
8. Remove skillet from heat and stir in vanilla extract.
9. Serve and enjoy!

Ryan and I enjoyed this delicious meal at 4:45 pm. I know that's really early, but I don't really get to eat lunch at work anymore. I was eager to make this quick meal and dig in!
