Paleo Food Friday #11 + Brussels Sprout Salad Recipe

It's been on of "those" weeks at work. But that's okay because it's Friday. There was a lot of good food eaten and good workouts completed and decent lessons taught this week. And sometimes that's all I can ask for!

This week I have our regularly scheduled Paleo Food Friday along with a quick recipe for a brussel sprout salad (slightly different from a previous one I've posted!).

So without further ado, let's get started with...



SATURDAY


When you're not in the mood to cook, taco salad is the way to go. Find a taco seasoning you like (I like McCormick and Trader Joe's brand taco seasonings), cook meat with seasoning like you usually would, and throw it on top of a large salad! Our salad had bell peppers, tomatoes, mixed greens, guacamole, and salsa. 

Taco salads are so filling that I usually have a ton of leftover meat that I can use in salads and scrambled eggs for the rest of the week!

SUNDAY

One of the few times I have sunlight to take a decent picture!

Sunday's dinner side was a brussels sprout salad. Here's the recipe:

Ingredients:
1 lb brussels sprouts, sliced in half
2 tablespoons grass fed butter, divided
1/4 teaspoon nutmeg
1/2 cup almonds
1/2 cup pecans
1/2 teaspoon apple cider vinegar
1/2 teaspoon honey
1/2 teaspoon dijon mustard
salt and pepper, to taste

Instructions:
Heat a tablespoon of butter over medium heat in a skillet. Add the sliced brussels sprouts and saute for 3-5 minutes, or until slightly browned. Remove brussels sprouts from pan and place in a mixing bowl. Add the remaining tablespoon of butter and nuts to the pan. Saute for about 2 minutes. While the nuts are cooking, add remaining ingredients into the mixing bowl with brussels sprouts. Once the nuts are done, add them to the bowl and mix thoroughly. Place the bowl in the refrigerator to cool for about 30 minutes.

MONDAY


Another quick and simple dinner. Pesto chicken is one of the easiest and yummiest dishes on the planet. First, I baked 3 chicken breasts and then shredded them with a fork. Then I mixed them with a pesto mixture I had warming in a small sauce pan. The mixture included: a small jar of pesto sauce, 1 tablespoon grass fed butter, and a splash of coconut milk. I mixed the chicken in the sauce and served it on top of spaghetti squash and with a side of brussels sprout salad!

TUESDAY


Tuesday's breakfast involved a few leftovers. I had a little pumpkin I had to use up, and I also had one tiny paleo waffle that was calling my name. First, I made microwaved "baked" apples, drizzeld them with honey and cinnamon, added pumpkin puree, the paleo waffle, and almonds. It was a giant paleo breakfast bowl of goodness.

WEDNESDAY


Wednesday was another night when I wasn't into cooking a big meal. I'm realizing now that was a trend for this week. Wednesday night I had a large salad. It included mixed greens, leftover brussels sprout salad, avocado, tomatoes, bell peppers, and two eggs.

THURSDAY


There were still brussels sprouts leftover on Thursday! For Thursday's lunch, I packed a salad that included mixed greens, brussels sprout salad, tomatoes, bell peppers, and taco meat. 

FRIDAY


By Friday I was in the mood to cook a meal that wasn't a quick fix. Friday's dinner was Bacon Chili Stuffed Sweet Potatoes (recipe) and roasted broccoli. Ryan and I really enjoy this meal. The chili is smoky and flavorful, and it goes really well with sweet potatoes!

NON-PALEO FOOD ITEM...because life's too short.
This is one of those weeks where non-paleo food items popped up more frequently than I'd like to admit. I actually feel like I ate really well this week, but the additional celebratory food items weren't so great.

The most recent Trader Joe's "Fearless Flyer'' mentioned its new Honey Walnut Fig cream cheese. Here's why this snack isn't all that bad: first, organic whole fat dairy has a few dietary benefits; second, honey and figs and walnuts are all paleo; third, it's filling and delicious! It's on the sweet side, so I would definitely classify it as a dessert, but there are worse desserts out there :)


This next snack has no defense...it's definitely an indulgence.

Trader Joe's Cookie Butter Ice Cream. If you haven't had it, go get some. It's INCREDIBLE. 

We also celebrated Ryan finishing a big test, and there was a dinner for the residents at an Italian restaurant. There were a few drinks and extra servings of food consumed. But that's okay because I still managed to eat well at other meals and get plenty of exercise. Next week is a new week!
